1. Roasted Carrot & Feta Salad: Preheat oven to 400 degrees. Toss chopped carrots in olive oil and season with salt and pepper. Roast in oven for 20-25 minutes, stirring once. Transfer carrots to a bowl and mix with crumbled feta cheese, diced red onion, and chopped parsley. Drizzle with lemon juice and olive oil and season with salt and pepper. Enjoy!

2. Maple-Roasted Butternut Squash: Preheat oven to 400 degrees. Toss cubed butternut squash in melted butter and maple syrup. Roast in oven for 25-30 minutes, stirring once. Transfer squash to a bowl and mix with toasted walnuts, diced apple, and chopped parsley. Drizzle with maple syrup and olive oil and season with salt and pepper. Enjoy!

3. Grilled Zucchini & Feta Skewers: Preheat grill to medium-high heat. Cut zucchini into cubes and thread onto metal skewers with cubes of feta cheese. Grill for 8-10 minutes, turning once. Transfer skewers to a plate and drizzle with olive oil and freshly squeezed lemon juice. Enjoy!
