Grilled Sandhill Crane Breast with Blueberry Sage Sauce

Ingredients:

4 Sandhill Crane breasts

1/4 cup olive oil

2 tablespoons freshly squeezed lemon juice

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon sea salt

1/2 teaspoon ground black pepper

For the Blueberry Sage Sauce:

2 tablespoons olive oil

2 shallots, minced

2 cloves garlic, minced

1/2 teaspoon dried sage

1/2 teaspoon dried thyme

1/4 teaspoon sea salt

1/4 teaspoon ground black pepper

1 cup fresh or frozen blueberries

1/4 cup chicken broth

1 tablespoon freshly squeezed lemon juice

1 tablespoon honey

Instructions:

1. In a small bowl, combine the olive oil, lemon juice, oregano, garlic powder, onion powder, salt, and pepper. Mix until combined.

2. Place the Sandhill Crane breasts in a shallow dish, and pour the marinade over them. Turn to coat with the marinade. Cover, and place in the refrigerator for at least 30 minutes.
