1. Frisky Fishy Stew –
Ingredients:
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 2 shallots, minced
– 1 stalk celery, chopped
– 1 bell pepper, chopped
– 1 large can (14.5 ounces) diced tomatoes
– 1 cup white wine
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
– 2 cans (6 ounces each) tuna in water
– 2 tablespoons fresh parsley, chopped
– 2 tablespoons fresh dill, chopped
Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add garlic and shallots and sauté until soft and fragrant, about 3 minutes.
3. Add celery, bell pepper, diced tomatoes, white wine, salt and pepper. Bring mixture to a simmer and cook for 8-10 minutes, stirring occasionally.
4. Add tuna and simmer for 2-3 minutes to heat through.
5. Stir in parsley and dill and remove from heat. Serve warm.
